Crispy Fried Eggplant with Rousong

- Meizan Crispy Frying Mix: 150 g
- Eggplant: 3 fruits
- Meizan cooking oil
- Pork or chicken rousong
- Shrimp salt
Cut the eggplants into pieces and soak them in salt water, then wash and drain.
Stir the frying mixture with water using the ratio of 1 cup of flour to 1/2 cup of water, until the dough is smooth and free from lumps.
Dip the eggplants through stirred crispy frying mix. Then put the eggplants in a heated oil pan and fry until golden crispy. Remove the eggplants to drain the oil.
